Why not use really small security cameras?

Why don’t department stores and pharmacies use really small security cameras in order to catch theft instead of larger and more easily visible ones? This will increase their chances of catching this activity. And by smaller i mean really small as in thumb size and hidden in different places.

Large, visible cameras are a deterrent to people even thinking about stealing.

See, it’s better to reduce the incidences of stealing than to increase the capture rate.

sometimes a big noticeable camera can be a deterrent by itself

They already do. I knew a guy who worked security in a large dept. store and he said the cameras you see are just for show. The real ones are tiny and are hidden all over the place.
