A security camera outputs a high resolution image through a BNC connector. What kind of signal is it? What can read that signal? Using an adapter to make the BNC into an RCA jack won’t work will it?

That depends on the type of infra red. I’m not an expert but I think you may be confusing infra red imaging and thermal imaging.
At least some security cameras definitely use infrared source to ‘light up’ areas being monitored, as anybody up to no good could not tell they are clearly visible to infra red [...]
